Blueberry Chia Jam

This quick, very lightly sweetened jam thickens thanks to the magical powers of chia seed. Filled with fiber, protein, omega-3 fatty acids and various micronutrients, chia seeds pack a powerful nutritional punch and sets fresh fruit to a jammy consistency without the need for pectin, copious amounts of sugar, or excessive boiling. Substitute other soft fruits or berries and you can have fresh, seasonal jam at the ready all year long. Additionally, try it as a compote swirled into your favorite dairy-free yogurt, or as a topping for dairy-free vanilla ice cream.

Makes about 12 ounces

Ingredients:

3 cups fresh berries or other soft fruit, rinsed and drained

3 Tablespoons pure maple syrup or agave nectar

3 Tablespoons chia seeds


1) Place the fruit and maple syrup or agave nectar in a medium saucepan over medium heat. Cook, stirring occasionally to prevent sticking, for approximately 10 minutes until the fruit has softened and the surrounding fruit juice liquid has evaporated somewhat.

2) Stir in the chia seeds and continue cooking for another 3-5 minutes. Remove from heat.

3) Carefully spoon jam into a clean, screw-top jar and leave it to cool. It will thicken and set as it cools. Store in the refrigerator for up to 2 weeks.
