Green Pea Mock-a-MolÉ

Makes about 2 cups.

I can devour a bowl of guacamole in about 5 minutes flat, but just because I can doesn’t mean that I should. For those times when I want something lighter or have run out of avocados, this Green Pea Mock-a-Molé is a quick alternative. Keep some peas in your freezer and you’ll always be ready to make this recipe, which is delicious as a dip, a toast or sandwich spread, or a garnish for Mexican dishes.

1 1lb bag frozen green peas

juice of 2 limes

4 tablespoons minced red onion

3 tablespoons minced cilantro

1/2 teaspoon sea salt, or to taste

2-4 dashes of hot sauce, to taste

1 clove garlic, minced

  1. Quickly cook peas in a saucepan of boiling water for 1-2 minutes, just until no longer frozen. Drain and rinse under cold running water to cool.

  2. Place peas in a food processor with lime juice, salt, hot sauce and garlic. Pulse to process until well-mixed and uniform, but not so long as to turn it into a purée.

  3. Taste and adjust seasoning as needed. Serve with raw vegetables, tortilla chips, as a sandwich or toast spread, or as a sauce on top of Mexican food or vegan bowls.
